Roast Rum & BBQ Cauliflower with spicy green beans and mushrooms
Ingredients
1 large head of Cauliflower
1/2 a jar of Rum & BBQ Sauce
2 heaped tbs of Little Brixton Marinade
200g of sliced mushrooms
350g Green Beans
Side of choice, we have gone for quinoa and brown rice

2 tbs of oil for frying
Method
1. Pre-heat oven to 180 degrees. Line a baking tray with baking paper. Cut the base of the cauliflower flat and with a cross in the stem.
2. Bring a large saucepan (large enough to fit the cauliflower) of salted water to the boil. Place cauliflower in and simmer for 5 minutes. Drain.
3. Place cauliflower on baking tray and drizzle with oil. Season with Jamaican Jerk Rub, cover with foil and bake in the oven for 30 minutes.
4. Remove the cauliflower and uncover and pour over the Rum BBQ Sauce. Bake, uncovered for a further 10 minutes.
5. Meanwhile mix the the Green Beans and Mushrooms in a bowl
6. in a hot frying pan start frying off the beans and the mushrooms
7. After a couple of mins add the Jerk Marinade until cooked.
8. Remove the Cauliflower from the oven and serve with the green beans.
9. Add the other 1/4 of the jar of Rum & BBQ Sauce to the cauliflower and serve with the beans and mushrooms and side of your choice!
